1/2 cup drained canned white beans ( canellini, white kidney or great northern beans) if you use dried soak over night.
2 1/4 cups water
1 3/4 old fashioned oats
1 tablespoon agave or coconut palm syrup
3/4 tablespoon flaxseed
1 tablespoon baking powder
1 1/2 vanilla extract or 3/4 teaspoon vanilla extract plus 3/4 teaspoon coconut extract or almond or orange for variety.
1 teaspoon salt . Place all ingredients in blender and mix until ingredients are smooth. Use 1/3 cup on a waffle iron and cook 8 minutes. If batter gets too thick then add water to return the mix. The waffles should be brown and crisp. Cool completely and freeze. I usually make a double batch and freeze putting wax paper in between each waffle. Makes 10 4" waffles ( 5 servings). Per serving: 196 calories, 10 grams protein, 35 carbs, 2 g sugar, 3 g total fat, 11% from fat, 0 cholesterol , 6 grams fiber, 386 sodium.
